Slow Cooker Apple Cider Balsamic Chicken

• 4 boneless skinless chicken breasts
• 2 cups apple cider
• Zest and juice of 1 lemon
• 1 cup of chicken stock or broth
• ¼ balsamic vinegar
• 2 tablespoons Dijon mustard
• ½ teaspoon sea salt
• ½ teaspoon of thyme
• ½ teaspoon smoked paprika
• ½ teaspoon black pepper
• 3 cloves of garlic minced
• 3-4 tablespoons extra virgin olive oil (EVOO)
• 1 ½ cups roughly chopped carrots
• 1 small onion chopped
• 3 apples, chopped sweeter variety, fuji, honeycrisp, gala, jonahgold

Directions

• INSTRUCTIONS
1. In your slow cooker, whisk together apple cider through olive oil to include the spices on your ingredient list. Add chicken breasts, turning once to coat. Add carrots and onion.
2. Set slow cooker to high for 4 hours.
3. At four hours, stir and add chopped apples.
4. Continue cooking on low for 30 minutes.
5. Serve hot over quinoa and garnish.
