Pumpkin Pie Overnight Oats




Ingredients

• 1/2 cup honey or vanilla Greek yogurt
• 1/2 cup unsweetened vanilla almond milk
• 1/2 cup pumpkin puree
• 1 tablespoon honey
• 1/2 teaspoon vanilla or almond extract
• 1 cup Old-Fashioned Oats
• 2 teaspoons chia seeds
• 1/4 teaspoon cinnamon
• 1/8 teaspoon nutmeg
• 1/8 teaspoon ground ginger
• Walnut garnish (optional)

Directions

1. In a medium bowl, mix together greek yogurt, almond milk, pumpkin puree, vanilla and honey until well combined.
2. Stir in oats, chia seeds and spices.
3. Pour into a glass jar or container and place in fridge for 4 hours or overnight. Makes 2 servings. Enjoy!
